Menu for the week of 3/30



Monday: Breakfast for dinner - Egg and Sausage casserole. We did not have omelets last week because the pork tenderloin ended up being enough for two meals. I used the veggies for other dishes last week, so I decided to make the casserole instead of omelets. Also, I substitute all low-fat ingredients for this recipe and use about half as much cheese.


Tuesday: Minestrone Soup


Wednesday: Minestrone Soup


Thursday: Black bean burgers with baked potatoes and salad


Friday: Dinner with friends


Saturday: Taco Barbecue Chicken with grilled squash and zucchini and rice


Sunday: Contessa Frozen Meal with salad

I'm so excited about this! I was thinking this weekend that I wanted a good black bean burger recipe - yum!
